Apple Carrot Muffins, GF

Ingredients
  1. 1 1/2 c Gluten Free Flour Mix
  2. 1/2 c Almond flour
  3. 1/3 c oats
  4. 1 1/2 tsp Baking Soda
  5. 1/2 tsp salt
  6. 1-2tsp cinnamon
  7. 1/2 cup raisins
  8. 1 cup grated carrot (one large carrot)
  9. 1 grated apple or ~ 1/2 cup apple sauce
  10. 1/4 cup melted butter
  11. 2 eggs
  12. 1 mashed banana
  13. 1/2 cup honey
  14. 1/2 cup milk
  15. Optional: top with nuts, add in chocolate chips instead of raisins, substitute other fruit for raisins, substitute zucchini for carrots and add in some cocoa powder as well. Substitute nondairy milk and melted coconut oil for butter.
Instructions
  1. Preheat oven to 375
  2. Mix together all wet ingredients in one bowl. Dry ingredients in the other and happily combine. Bake for 30-35 minutes. Once cooled muffins will pull away from wrapper but when warm will stick to it.
