Basic Waffle Recipe (GF and DF optional)

  • 3 c flour or 1:1 GF flour
  • 2 tsp baking powder
  • 3/4 tsp baking soda
  • 2 tsp salt
  • 3 eggs separated
  • 2 c milk or buttermilk or non dairy substitute
  • 1 stick melted butter
  • 2 tsp vanilla (reduce to 1tsp for savory waffles)
  • If making a sweeter waffle feel free to add a few T of sugar


  • Mix wet and dry ingredients in separate bowls.  Beat eggs whites until they form peaks or at least are nice and frothy.  Combine wet and dry and then fold in egg whites. Let sit for a few minutes and then pour into waffle maker.  Feel free to get creative with additional flavors, spices, you can omit the vanilla and go savory with rosemary and thyme and asiago cheese, stuff the waffles by pouring half the batter and then placing a slice of cheese, ham and fried egg and pouring second half of batter and cooking waffle as usual. 
    Waffle variation suggestions:
    Banana bread: mix in chopped bananas, walnuts, cinnamon and brown sugar
    S'mores- mix in crumbled graham crackerss, layer in chocolate and top with melted marshmallow syrup
    Pesto: basil, garlic, (chopped nuts optional), parmasean
    Pizza: layer with cheese and pizza sauce
    Rosemary, thyme, asiago
    Breakfast sandwich: layer in fried egg, ham/bacon, cheese
    Veggie: mix in diced veggies and shredded cheese
    Sausage scramble, mix in chopped up breakfast sauasage and scrambled eggs
    Ham and cheese
    PB, Banana Bacon - warm PB and layer
    Ranch, chives, bacon
    Carmalized pears
    Nutella stuffed
    Blueberry and cream cheese (mix blueberries with some flour, and mix in cream cheese or sweetened goat cheese)
    Lemon curd and top with whipped cream
    Dulce de leche
    Almond paste
    Sauteed greens stuffed
    Cinnamon Roll: cinnamon, brown sugar and cream cheese either layered or stuffed
    Pumpkin spice
